I am not much of a baker. I prefer cooking. Baking requires a lot of measuring and precision, two things I am not exactly a master at. When Maud approached me and asked me to come to try out her macaron cooking class I was a bit hesitant at first as I am sure it was going to be difficult and just not my cup of tea. But to my surprise, the class was so much fun and so easy even for a beginner like myself. Mauderne is offering small group cooking classes out of her home kitchen in the heart of Chelsea. It is an amazingly fun way to learn something new and the perfect thing to do on a Saturday afternoon.
When I arrived we were first taught about the difference between French and Italian macrons and the type of macron we would be making. I was told the French meringue is the best-known method for home cooks, while the Italian meringue is a hot sugar syrup which is whipped into egg whites until they reach stiff peaks. At Mauderne’s class, we used the Italian meringue. Maud demonstrated this but she suggested that we should make our meringue hours before so that it can cool and be ready when actually making our macarons. The entire class I felt like I was being supported by Maud and felt enabled to do it myself. She was very encouraging and made sure that all the students knew what to do along the way. She would always demonstrate first and then watch us as we followed her footsteps. It was lovely that she also offered us some teas and macarons of her own while we were waiting for ours to bake.
