Bang Bang Cauliflower

Wagamama’s Bang Bang Cauliflower is my favorite side dish. I always order this delicious dish whenever I go into Wagamama. I never realized how easy it was to recreate. Thanks to Wagamama starting a great campaign going where they would share the idea of ‘Wok from Home’. Their own chefs would share the ingredients and recipes for their classic dishes so that you can make your own firecracker sauce and bang bang cauliflower at home even when they aren’t in delivering distance.

I would love to tell you that I made this recipe from the ideas in my head, but I actually took this from Wagamama’s Instagram account. If you like this recipe I am sure you are going to enjoy my Firecracker Chicken recipe.

Ingredients for the Firecracker Sauce:


(This will make more than one serving and you can save the extra in a jar or container)

50ml Yakitori Sauce (Check ingredients below to make this sauce)
50ml Oyster Sauce
100ml Siracha Sauce
2 Tbsp Fish Sauce
2 Tbsp Dried Chili Flakes
6 Tbsp Honey
3 Tbsp Sweet Chili Sauce

Ingredients for Yakitori Sauce:

1 Tbsp Sake
1 Tbsp Mirin
6 Tbsp Light Soy Sauce
1 Tsp Sugar

Ingredients for the Dish:

4tbsp vegetable oil
1 head of cauliflower
2 cups cornflower
1 red onion
2 spring onions
1 serving of firecracker sauce (see above for ingredients)
1 piece of fresh ginger
Coriander (for gardnish)

Bang Bang Cauliflower

How to make Bang Bang Cauliflower:

  1. Prepare your firecracker sauce by mixing all the ingredients above in a large bowl
  2. Floret your cauliflower into small pieces
  3. Coat your cauliflower with some cornflour
  4. Shallow fry your coated cauliflower in a pan or wok with a bit of oil
  5. Fry for a few minutes until the cauliflower turns golden brown
  6. Remove the cauliflower from the oil and place on a plate with a paper towel to absorb the excess oil
  7. Remove excess oil from the pan and add in onions and spring onions and then add the cauliflower back into the pan. Soften the onions a bit.
  8. Add in the firecracker sauce into the pan
  9. Let the sauce simmer in the hot pan for a few minutes and toss and then remove from the heat
  10. Serve up on a plate and add ginger, chili and coriander as a garnish and enjoy!
